  • Onion: Use one medium onion, finely chopped.
  • All-purpose flour: The all-purpose flour adds texture and helps bind the latkes.
  • Teaspoon salt: A decent dose of salt helps the flavors come out.
  • Pepper: And a little dose of pepper helps, too.
  • Eggs: The eggs need only to be lightly beaten.
  • Sweet potatoes: Make sure the sweet potatoes are peeled fully and then shredded.
  • Peanut or canola oil: You can really use any neutral oil here.
  • Optional: Minced chives, sour cream and applesauce are all optional toppings, but they’re well-advised.

Step 1: Prepare an egg blend, then toss and coat the sweet potatoes

In a large bowl, combine the first chopped onion, four, salt and pepper, then stir in the eggs and mix until everything is blended. Then, add the potatoes and toss them to coat.

Step 2: Flatten and fry the latkes in batches in a skillet

Heat a quarter of a cup of the oil in a large nonstick skillet over medium heat. Then, drop the batter by quarter cupfuls into the oil, pressing lightly down on them to flatten them. Fry the latkes in batches until golden brown on both sides, using the remaining oil as needed. Drain the cooked latkes on paper towels. If desired, top with minced chives and serve with sour cream and applesauce.

Sweet Potato Latke Variations

Swap regular potatoes for half of the sweet potatoes: Using regular potatoes for half of the shredded blend will yield a latke that’s a bit less sweet and more savory.

Add in rosemary: To add more flavor to these already flavorful latkes, try adding dried rosemary to the mix. Or, cook them with sprigs of fresh rosemary under each latke.

Use yams instead: You can follow this exact same recipe using yams instead of sweet potatoes.

  • 1/4 cup all-purpose flour
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 large eggs, lightly beaten
  • 2 pounds medium sweet potatoes, peeled and shredded
  • 1/2 cup peanut or canola oil
  • Optional: Minced chives, sour cream and applesauce

Directions

  1. In a large bowl, combine the first 4 ingredients. Stir in eggs until blended. Add potatoes; toss to coat.
  2. Heat 1/4 cup oil in a large nonstick skillet over medium heat. Drop batter by 1/4 cupfuls into oil; press lightly to flatten. Fry in batches until golden brown on both sides, using remaining oil as needed. Drain on paper towels. If desired, top with minced chives and serve with sour cream and applesauce.
